Homemade breakfast sausage is super easy to make and incredibly delicious! It’s made with ground pork, ground turkey, a touch of maple syrup, and spices. Plus, it can be baked or fried on the stovetop. Enjoy the delicious sausage as part of your breakfast, or use it to make easy breakfast sandwiches with egg, cheese, and avocado!

  • Organic Ground Pork – I like to use organic ground pork for this recipe. If you don’t have organic, conventional ground pork will also work.
  • Organic Ground Turkey – both ground turkey thigh and turkey breast will work well. I personally prefer turkey thigh since it has a little more fat.
  • Maple Syrup – use pure maple syrup for best results.
  • Dried Garlic, Dried Onion
  • Sea Salt & Pepper
  • English Muffins – if you’re planning to make breakfast sandwiches with the sausage. You can also use croissants or bagels.

How to Make Homemade Breakfast Sausage

After struggling for years to find a delicious, organic breakfast sausage that I truly enjoyed, I decided to make my own. I only wish I had done it sooner! These homemade breakfast sausage patties are so easy to make!

  1. Preheat the oven to 400°F; if baking the sausage. Line a large baking sheet with parchment paper or non-stick foil.
  2. Place the ground pork and ground turkey into a large mixing bowl. Add all the seasonings and spices – dried garlic, dried onion, paprika, sea salt, black pepper, maple syrup, and fresh parsley.
  3. Use your hands to knead the two meats together, mixing until a uniform mixture forms.
  4. Use a large scoop to measure out the meat mixture for each sausage patty. I typically use 6 tablespoons, or two, 3-tablespoon scoops, for each patty.
  5. Gently roll each scoop into a ball and place it onto parchment paper. Use your fingers to gently press the sausage into a patty.

2 Cooking Methods for Breakfast Sausage

This homemade breakfast sausage can be cooked two ways – it can be baked or fried on the stovetop.

  1. Method 1 – Baking: press the sausage into patties on a baking sheet lined with parchment paper. It’s okay if the sausage patties touch; you can separate them afterwards with a knife.
  2. Bake at 400°F for 18 to 22 minutes, until the internal temperature reaches 165°F.
  3. Once baked, remove the patties from the baking sheet and lightly pat them dry with paper towels.
  4. Method 2 – Frying: press the sausage into patties on a sheet of parchment paper. Preheat a large frying pan over medium heat and add a drizzle of avocado oil.
  5. Fry the patties for about 5 to 6 minutes per side, until the internal temperature reaches 165°F.

Ways to Enjoy Breakfast Sausage

Enjoy the homemade breakfast sausage with a side of eggs on the side. Any preparation of eggs will work well – scrambled, fried, poached.

You can also chop the cooked sausage into smaller pieces and use it for omelets, quiche, or breakfast frittata.

Here’s an easy breakfast sandwich recipe with breakfast sausage! This sandwich is simple and easy to make!

  1. For the breakfast sandwich recipe, first toast the English muffins. I like to toast mine with butter on a griddle. A toaster oven will also work great.
  2. Prepare fried eggs next. Preheat a large, non-stick frying pan over medium heat. Add a few teaspoons of butter, then drop eggs into the melted butter. Cook the eggs to your desired level of doneness; I like the eggs over-medium.
  3. Prepare the mashed avocado next. Scoop the avocado into a large bowl and season with salt, pepper, and a squeeze of lemon juice. Mash the avocado with a fork into a chunky spread.
  4. To assemble the sandwiches: first, spread a bit of mayonnaise onto each toasted English muffin. Add a generous amount of mashed avocado on one half.
  5. Add a sausage patty, followed by a fried egg, then top with cheese of your choice. Sandwich the two halves of the muffin together and enjoy!
